Cultural significance/inspiration: Indian food is very popular in England and Scotland.  Chicken Tikka Masala was actually invented at an Indian restaurant in Glasgow (the Shish Mahal).  Traditionally, Tikka Masala is a spicy red curry with yoghurt.  Our spin is a bit “deconstructed”, using the yoghurt as a garnish.  Our chicken is brined, stuffed with a bit of curry paste, wrapped in chicken skin, smoked, and then deep fried for a nice crisp skin.
