Spring Vegetable Bridie
A flaky pastry filled with a carmelized spring onions, ramps, carrots, salsify, and goat cheese
Bridies are a traditional Scottish pastry. The most common bridie found is
the Forfar Bridie, which is a mincemeat pastry with onions. We at The Haven decided last spring that we like
making a vegetarian version of this traditional Scottish snack, using some wonderful spring vegetables and some
delicious Vermont Butter and Cheese Chevre goat cheese.
