Sunchoke Cullen Skink
Finnan haddie, sunchoke, and Yukon Gold potato soup with sunchoke chips
The cold weather is here and it’s time for soup to return to The Haven’s menu! Starting Thursday, we will be serving our twist on a traditional Scottish soup called Cullen Skink. This chowder-like soup is native to the town of Cullen on the northeast coast, and is usually served at the beginning of formal dinners in Scotland. The sunchoke (or Jerusalem artichoke) season starts in October, and this is the time of year when they are sweet and tender. For garnish, we will be frying our own sunchoke chips for a nice crunch on top!
