House-made dried cherry and sage sausage, Stilton and chive mash, red wine caraway braised cabbage
Cultural significance/inspiration: For our Christmas Eve dinner, Wax found a great Scottish recipe for a holiday sausage with dried cherries, sultanas, and sage. We liked it so much that we are bringing it back for a few weeks here in January. It will be served with chive and Stilton blue cheese mash and some bright red cabbage that is braised with red wine and caraway seeds.
This is perhaps the best sausage I have ever put in my mouth.
